Market Trends: Huge Price Swings in Both Directions

Market Overview

The average Wholesale Price Index (+1.29%) was slightly up this week, but the modest increase hides the huge movements in specific categories.

Pork Shoulder (+10.41%) continued to spike and has increased 31% over the last three weeks! If you can, it might be time to rotate out any menu items with Pork Shoulder. We also saw a large increase in Fresh Potatoes (+7.37%) and Beef Strip Loin (+4.01%). There was a smaller increase in Pork Loin (+3.20%), Chicken Wing (+2.70%), Chicken Breast (+1.94%), Shell Eggs (+0.84%), and Cod (+0.59%).

On the other end of the spectrum was a huge decrease in Fresh Lettuce prices (-13.50%). Fresh Onions (-4.26%) and Ground Beef (-3.86%) also saw decreases as well, while Fresh Bell Pepper (-0.65%) was mostly flat.

Commodity (-1.01%) was down overall but there were also huge spikes in both directions as well with 6 categories up and 6 down. We expect the overall Wholesale market to go down next week but with a continuation of large price changes in both directions.

Category Trends

Ground Beef

As expected, we saw a decrease in wholesale (-3.86%) with commodity (-10.38%) down as well. Wholesale is likely to be dragged down further next week.

Shell Eggs

Wholesale remains fairly flat after previous increases (+0.84%) with a big bump in commodity (9.22%). Look for wholesale to increase significantly next week.

Pork Loin

Wholesale increased (+3.2%) and Commodity (+2.13%) rose as well. Look for Wholesale to be slightly up to flat next week.

Pork Shoulder

A huge jump in Wholesale (+10.41%) with a smaller increase in Commodity (+3.35%). Look for Wholesale prices to be flat to down next week.

Fresh Lettuce

As expected, Wholesale (-13.50%) decreased significantly and Commodity (-2.16%) continues to fall. Look for prices to be flat to slightly up next week.

Fresh Potatoes

We continue to see increases in both Wholesale (+7.37%) and Commodity (+6.14%). Expect prices to be slightly up to flat next week unless commodity prices fall.

Chicken Breast

Wholesale (+1.94%) increased slightly while Commodity (-2.30%) was slightly down. Expect a moderate decrease in Wholesale prices next week.

Fresh Bell Pepper

Wholesale (-0.65%) remained flat while Commodity (+3.91%) saw an increase. Expect Wholesale prices to be up next week.

Fresh Onion

Big drops in Wholesale (-4.26%) and Commodity (-11.26%). Look for Wholesale prices to be flat to slightly down next week.

Beef Strip Loin

Wholesale saw a moderate increase (+4.01%) while Commodity was slightly down (-1.42%). Expect Wholesale prices to flatten out next week.

Chicken Wing

Wholesale stabilized (+2.7%) after weeks of decreases while commodity (-2.78%) continues its downward trend. Look for Wholesale to be flat to slightly down next week.

Cod

Wholesale (+0.59%) continued to be mostly flat, while Commodity (+1.60%) saw a slight increase. Expect Wholesale prices to remain mostly flat next week.
